Menu Plan Monday – Feb 9, 2009

Here is my menu plan for this week! We didn’t eat the salmon dinner last week, so that’s repeated again this week.
- Monday: Chinese Chicken, Rice, Frozen Vegetables
- Tuesday: Salads with hard boiled eggs, Homemade Bread
- Wednesday: Chicken Chow Mein, Egg Rolls
- Thursday: Salmon Dinner
- Friday: Baked Chicken Stew
- Saturday: Leftovers/Casserole from Freezer
- Sunday: Pizza
I think we’ll be taking a break from salads for awhile after this week. For awhile, we ate several a week, but I think we’re getting tired of them now. I don’t like throwing away food, so if we’re not eating them, I’ll stop buying the ingredients for a few weeks.

Do you still have casseroles that you prepared and froze before Kelvin was born? If so, that was some great planning ahead on your part!
Kim – I have a couple from before he was born still. I have quite a few in the freezer, though, because I usually double one recipe per week and stick the other half in the freezer. The freezer is getting really full, though, so I think we also need to eat one out of the freezer every week.
Lora, I watched a little bit of a morning show today and they had a whole segment on exactly what your doing with coupons, They said it was becoming a huge phenomenon around the country and that it saves people TONS of money. Although, of course you already know that from doing it. =) They even said that some women are starting little seminars on teaching others how to do it and they charge the people who attend $25 each and their houses are packed. Pretty cool!
I know…it’s huge right now!! I’m friends with some of these people through their blogs. I really wish some of them lived in my area so I could attend their workshops! I can definitely see why it’s so big right now, with the economy and all. I don’t really *have* to do this (I just enjoy it), but I know some people do.
